It holds 30 gallons of product and cooks by circulating steam around its jacket, which surrounds its bottom two-thirds, enveloping food with heat from all sides for even cooking without hot spots. This steam is self-contained, so the kettle doesn’t need water refills or connection to an external steam source.Users can add ingredients to the Accutemp ALLGB-30 steam kettle by opening its hinged, one-piece lid. When it’s time to remove liquid from the container, users can open the draw-off valve.
